Strawberry & Hemp Smoothie
10 Strawberries, (approx. 175g)
1 Banana, sliced.
20g Hemp Hearts
200 ml orange juice, chilled
Method
Step 1
Blitz the strawberries, hemp hearts with the banana and orange juice until smooth in a blender.
Step 2
Pour the smoothie into a tall glass to serve.
Hemp Hearts Brown Bread
250g Wholemeal flour/The little Mill Whole Mill Flour
200g White plain flour
440ml Buttermilk/Milk (add lemon to sour the milk)
60g hemp hearts/Milled Hemp
1 teasp. Baking soda.
1 teasp Sea salt
2 teasp. Honey
Method
Step 1
Preheat the fan oven to 200 degrees C.
Step 2
Sieve the white flour and add all other dry ingredients into a large bowl.
Step 3
Make a well in the center and pour in most of the wet ingredients.
Step 4
Using one hand with fingers outstretched, mix in with full circular movement from the center to the outside of the bowl, gradually drawing in the flour from the sides, add a little more milk if necessary.
Step 5
The dough should be softish, not too wet and sticky.
Step 6
Mix as gently and as quickly as possible without over mixing to keep it light and airy.
Step 7
When ready, turn it out onto a well-floured board/surface.
Step 8
Dust the dough with flour and tidy up and flip it over gently and pat into a round shape roughly 4cm deep.
Step 9
Sprinkle some flour onto a baking tray and transfer the dough to the tray.
Step 10
With a knife cut a deep cross on the top and prick the 4 corners of the cross with the knife.
Step 11
Pop into the oven & bake for 30 minutes until golden brown.
Carrot Cake Muffins
Ingredients for 12 Servings.
60g Milled Hemp/Hemp Hearts
225 ml Milk
Orange zest
3 large carrots peeled and grated (150g)
125g Sugar of choice/ sweetener
250g Self-rising flour
1 tsp Baking powder
1 ½ tsp Ground cinnamon
1 tsp Ground ginger
2 Eggs
4 tbsp oil of choice
Method
Step 1
Sieve flour, baking powder, add milled hemp, sugar, and spices into a bowl.
Step 2
Break eggs into a separate bowl and add the oil, beat with a fork until the egg yolks are broken and mixed well. Add the wet ingredients to the dry ingredients.
Step 3
Fold grated carrots into the mixture.
Step 4
Add orange zest and mix together.
Step 5
Place equal amounts of the mixture into muffin cases.
Step 6
Bake for 20 – 25 minutes, allow muffins to cool down before taking out of the muffin tin.
No Bake Hemp Seed Bars
½ cup sesame seeds
½ cup hemp hearts
½ cup sunflower seeds
½ cup unsweetened shredded coconut
2 cups pitted dates.
½ cup tahini, peanut butter, or almond butter
½ tsp sea salt
Method
Step 1
Add seeds and coconut to a food processor and process into flaky consistency.
Step 2
Add dates, peanut butter, and sea salt, and process until you have a thick, sticky dough (if it appears to be too chunky add a small bit of warm water and process again).
Step 3
Line a baking tray with parchment paper so it sticks out over at least 2 sides of the tray. Firmly press the dough into the tray, taking a few minutes to really work it in there until it’s flat and firm.
Step 4
Place it in the fridge for 30-60 minutes to firm up. Once cooled, they can be sliced into even squares.
Hemp Heart Overnight Oats
45g porridge oats
Milk of choice
1 tsp chia seeds
1 tbsp hemp hearts
Sweetener of choice
Add fruit of choice on top
Method
Leave to chill in the fridge for an hour, stir well before eating.
Hemp Milk
1 cup Hemp hearts
4 cups Water
Method
Put through a blender/ food processor until smooth and creamy.
It may be necessary to filter the milk.
*High protein milk alternative.
Lemon & Hemp Scones
450g Self Raising Flour
1 teaspoon baking powder
1 Pinch of Salt
50g Caster Sugar
110 g Butter
1 egg
Zest of 1 lemon
60g Hemp Hearts/Milled Hemp
225 ml Milk
Method
Step 1
Sieve flour, baking powder, add sugar, salt and hemp into a bowl and mix together.
Step 2
Rub in butter with fingertips.
Step 3
In a separate bowl beat the egg, add the milk, and beat with a fork. Add to the dry ingredients mixing to a soft dough. If mixture is too wet and loose at this stage add a little extra flour.
Step 4
Transfer the mixture to a floured surface and flatten it out to about ¾ inch in depth.
Step 5
Using a scone cutter or a glass cut out some shapes and transfer to a lined or greased baking tray.
Step 6
Brush a little milk over the top of the scones.
Step 7
Bake in fan oven for 20 minutes at 180 degrees.
Step 8
Remove from oven and dust with icing sugar.
Step 9
Serve with your favourite Jam and freshly whipped cream.
Chocolate Hemp Tray Bake
Ingredients:
5oz of Self Raising Flour
3oz of Drinking Chocolate
5oz of Caster Sugar
7oz Soft Margarine
2tbsp Milled Hemp
3 Free Range Eggs
3 Tablespoons of Hot Water (not boiling)
Handful of Chocolate Chips
Method
Step 1
Grease & Line a large oven tray.
Step 2
Beat Sugar & Eggs together.
Step 3
Add Margarine.
Step 4
Sieve in the flour.
Step 5
Add Drinking Chocolate and keep mixing for 3 minutes until light & fluffy.
Step 6
Add the hot water and whisk again for 3 minutes until the mixture looks very light & fluffy.
Step 7
Fold in the Milled Hemp & Chocolate Chips.
Step 8
Pour mixture onto the oven tray and spread evenly across the tray.
Step 9
Pop into the oven for 20 minutes.
Step 10
Take it out of the oven and allow to cool.
Decorate:
1. Sprinkle some icing sugar on top
2. Slice into your desired sizes
3. SERVE & ENJOY
