These lemon and hemp scones are a fresh twist on a classic Irish favourite. Made with Fox Covert Farm Hemp Hearts, they’re delicately flavoured with bright lemon zest and deliver a boost of plant-based protein and omega fatty acids in every bite. Perfect for afternoon tea, weekend baking, or served warm with jam and freshly whipped cream.
Preheat your fan oven to 180°C. Sieve the flour and baking powder into a large bowl. Add the sugar, salt, and Fox Covert Farm Hemp Hearts and mix together.
Add the butter and rub it into the dry ingredients with your fingertips until the mixture resembles fine breadcrumbs.
In a separate bowl, beat the egg with the milk using a fork. Add the lemon zest, then pour into the dry ingredients and mix to a soft dough. If the mixture is too wet, add a little extra flour.
Transfer the dough to a lightly floured surface and flatten to roughly ¾ inch depth. Using a scone cutter or a glass, cut out shapes and place onto a lined or greased baking tray.
