Made with Fox Covert Farm Hemp Hearts, they’re delicately flavoured with bright lemon zest and deliver a boost of plant-based protein and omega fatty acids in every bite. Perfect for afternoon tea, weekend baking, or served warm with jam and freshly whipped cream.

Ingredients (Makes 8–10 Scones)

Steps

Step 1 – Mix the Dry Ingredients

Preheat your fan oven to 180°C. Sieve the flour and baking powder into a large bowl. Add the sugar, salt, and Fox Covert Farm Hemp Hearts and mix together.

Step 2 – Rub in the Butter

Add the butter and rub it into the dry ingredients with your fingertips until the mixture resembles fine breadcrumbs.

Step 3 – Add the Wet Ingredients

In a separate bowl, beat the egg with the milk using a fork. Add the lemon zest, then pour into the dry ingredients and mix to a soft dough. If the mixture is too wet, add a little extra flour.

Step 4 – Shape and Cut

Transfer the dough to a lightly floured surface and flatten to roughly ¾ inch depth. Using a scone cutter or a glass, cut out shapes and place onto a lined or greased baking tray.
